Recipe: Garlic & Herb Chicken Roast
Ingredients :
1 (5-7 lb) whole Free Range roasting chicken
2 tsp salt
1tsp black pepper
1 (1-oz) pkg Poultry blends fresh herbs (or make your own with rosemary, thyme and sage)
1 lemon, cut in half
1 entire bulb garlic, cut I half across al cloves
1 tbsp unsalted butter, melted, or olive oil
Vegetables such as potatoes, parsnips, carrots and onions, quartered or cut in 1 ½-inch pieces (optional)
Instructions:
- Preheat oven to 425 degree F
- Remove giblets from cavity, rinse chicken inside and out, then pat dry with paper towels
- Stuff cavity with 1 tsp salt. ½ tsp pepper, herbs, lemon, garlic and onion. Tie legs together with string.
Fold wings under the bird to prevent them from burning - Rub melted butter all over chicken. Sprinkle remaining salt and pepper over entire chicken.
- Put vegetables in baking dish and place chicken on top. The vegetables act as a cooking rack for the
chicken and get flavored in delicious chicken juice with no effort. - Cook for 1 ½ hours, until all juices run clear when thigh is pierced with a knife or thermometer reads
170 degree F. If you are cooking a smaller chicken, start checking for doneness after 1 hour - Remove chicken from heat. Cover with foil and allow to rest for 20 minutes.
